Peel potatoes and cook in boiling salted water until tender.
Drain and mash.
Stand several hours, uncovered, until dry. Add flour, eggs and salt.
Mix well.
Flour hands, form into 1 inch balls with crouton center.
Into a large kettle of gently boiling salted water.
Boil uncovered for 15 minutes. Serves 4.
