Heat olive oil and butter in a saucepan on medium high heat. Add onion and sauté until soft.

Add rice and sauté until rice is coated.

Add white wine or vermouth and stir until all the liquid is absorbed.

Add hot broth 1/2 cup at a time, until it is all absorbed in the rice and rice is tender.

Add hot water if more liquid is needed.

Stir in parmesan cheese and fresh parsley, and serve warm.
