Heat water until hot to touch (125° - 150°). Add sugar and yeast. for 5 minutes.
Set aside 1 cup flour.
Remaining flour and salt into yeast mixture. Stir in remaining make a soft dough.
Knead until smooth and elastic
(8 to 10 minutes).
Cover, let rise for 10 minutes. Divide smooth balls.
Let rise 30 minutes.
On a lightly floured surface roll each ball into a 5 inch circle. Place circles on a large cooling rack.
Set rack on bottom level of oven rack; bake at 500° for 5 minutes or until puffed and the top begins to brown.
Repeat with remaining circles.
