Pineapple Cheese Tarts
Pineapple Cheese Tarts is an impressive dinner. Made with 3/4 c. fine graham wafer crumbs, 1 tbsp. sugar, 1 egg yolk, 1/4 tsp. vanilla and 1 c. crushed pineapple, well drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 375Β°.
Butter 6 (5 ounce) custard cups.
Measure and set aside 1 tablespoon of the graham wafer crumbs.
Combine remaining crumbs with butter and 1 tablespoon sugar.
Press about 2 tablespoons of this mixture firmly against bottom and sides of each custard cup with a spoon.
Beat cream cheese until fluffy. Beat in egg yolk, 5 tablespoons sugar, 1/4 teaspoon vanilla and nutmeg.
Stir in pineapple.
Beat egg white until stiff and fold into pineapple mixture.
Spoon equal amounts of mixtures.
Set cups on a shallow pan and bake 20 minutes.
