Perdenales River Chili
Perdenales River Chili is an moderately easy dinner. Made with 2 lb. chili meat, 1 small onion, chopped, 1 clove garlic, minced, 1/2 tsp. oregano and 1/2 tsp. cumin, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Put meat, onion and garlic in a large heavy skillet.
Sear until light colored.
Add oregano, cumin, chili powder, Ro-Tel and hot water.
Bring to a boil, lower heat and simmer about 1 hour; as fat cooks out, skim.
This can be served as a dip, alone or over rice, or add chili beans for a chili con carne.
