Paul's Brunswick Stew
Paul'S Brunswick Stew is an impressive soup you can prepare in about 1 hour 10 minutes. Made with (6 lb.) chicken, gal. water, large onions, sliced, c. okra and c. tomatoes, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut chicken in 8 pieces and simmer for 2 1/4 hours in water. Remove chicken.
Add lima beans, tomatoes, onions, potatoes and okra to broth.
Simmer until limas are tender, about an hour.
Add hot water, if necessary and stir to prevent scorching.
Add corn and chicken, boned and diced, and seasonings.
Serves 8 to 10.
