Oxtail Rice Soup
Oxtail Rice Soup is an moderately easy dinner. Made with 2 or 3 oxtails, 1 small onion, diced, 1 c. celery, diced, salt and pepper and grated carrot, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook oxtails and salt in enough water to cover well for 2 hours or until soft.
Drain broth off meat.
Start rice in cold water; add onion and celery.
When rice is almost done, add the broth and continue cooking until tender.
Grate a little carrot for color and add the meat from the oxtails.
Season with a little beef soup base to taste.
