Heat oven to 375°.
In plastic bag, combine potato flakes, pepper and poultry seasoning.
In shallow bowl, combine egg whites and lemon juice.
Dip chicken, a few pieces at a time, in egg mixture.
Shake chicken in potato flake mixture to coat.
Place chicken in ungreased 15 x 10 x 1-inch baking pan.
Bake, uncovered, at 375° for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
