Oidemai
Oidemai is a Japanese celebratory red-bean rice made with glutinous rice and adzuki beans, lightly tinted pink by the bean liquid and finished with black sesame salt.

Rinse the rice and soak it while preparing the beans.
Simmer adzuki beans briefly, discard the first water, then cook again until just tender.
Reserve the pink bean cooking liquid and use it to steam or cook the rice with the beans.

Serve in bowls with black sesame salt and pickles.
