No-Bake Persimmon Pudding is an easy dinner. Made with 1 c. persimmon pulp, 1 c. granulated sugar, 1 c. nutmeats (hickory or pecan), 1 lb. large marshmallows, clipped and 25 graham crackers plus 12 graham crackers, all rolled fine into crumbs, this recipe delivers authentic, satisfying flavors. Mix pulp, sugar and whole or pieces of nuts (not ground).
Add marshmallows and crumbs from 25 graham crackers.
Make into loaf. Cover bottom and all over with the crumbs from 12 graham cracker. Makes 1 loaf.
Chill several hours.
Slice and can be served with whipped cream.
Keep remainder refrigerated.
