Nicaraguan Fried Rice
Nicaraguan Fried Rice is an moderately easy dinner. Made with 1 onion (medium), chopped, 1 carrot, grated, 1 green pepper, chopped, 1 c. rice and salt to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and drain rice.
Set aside.
In skillet, heat oil and saute onion, green pepper and carrot.
Add 2 cups water and salt on medium heat until rice is done.
Three minutes before, spread chopped tomato on top.
When rice is done, top with lid.
