Monmouth County Chicken Pot Pie
Monmouth County Chicken Pot Pie is an moderately easy dinner. Made with 2 c. cooked chicken, diced, 2 c. cooked ham, diced, 1/4 c. butter or margarine, melted, 1/4 c. sifted flour and 3/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place chicken and ham in 2-quart casserole.
Combine butter or margarine and flour; stir until smooth.
Slowly stir in broth and cream.
Cook (200°), stirring constantly until thickened.
Add salt, pepper, onion, mushrooms and sherry.
Pour over chicken and ham.
Drop sweet potato biscuit dough by tablespoons around edge of hot mixture.
Bake at 350° for 45 minutes.
Serves 8.
