Minestrone Soup
Minestrone Soup is an moderately easy dinner. Made with 1 lb. lean ground beef, 1/2 c. chopped celery, 4 cloves chopped garlic, 1/2 c. chopped onion and 46 oz. can chicken broth, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook ground beef, drain well and crumble.
Spray Dutch oven or large saucepan with nonstick cooking spray.
Heat over medium-high heat until hot.
Add onions, celery and garlic.
Cook and stir until crisp-tender.
Stir in remaining ingredients except pasta. Bring to boil.
Stir in pasta.
Cover.
Remove from heat and let stand 30 to 45 minutes.
Serve with Parmesan cheese, if desired.
