Mexican Dinner Casserole
Mexican Dinner Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 medium onion, chopped, 1 (16 oz.) can tomatoes, 1 tsp. salt and 1 1/2 tsp. chili powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Brown beef and onion in a large skillet.
In a mixing bowl, combine tomatoes and spices.
Mash tomatoes with potato masher. Add tomato mixture to meat mixture.
In a 2-quart casserole, alternate layers of tortillas, meat mixture and cheese until all ingredients are used.
Cover and bake about 30 minutes until heated through.
Cut into pie shaped wedges; top with 1 teaspoon sour cream.
