Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c. yellow corn meal, 1 c. flour, 1 tbsp. baking powder, 1 tsp. salt and 1 egg, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine dry ingredients and mix well.
Beat egg and milk together; add corn.
Saute onion and chilies in oleo until tender. Add milk mixture, onion mixture and cheese to dry ingredients. Stir until just mixed; pour into greased 8-inch square pan.
Bake in 400Β° oven for 35 to 40 minutes or until toothpick inserted in center comes out clean.
