Mexican Casserole
Mexican Casserole is an impressive dinner. Made with 1 1/2 lb. ground beef, 1 large onion, 1 can golden mushroom soup, 1 can mushroom pieces and 1 can ro-tel tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown ground meat in skillet.
Chop onion and add to meat. Cook until tender.
Add soup, tomatoes, mushrooms, taco seasoning, corn and peas.
Cook about 15 to 20 minutes.
Add seasonings to taste.
Line pan with taco chips.
Pour meat sauce over them and place grated cheese on top.
Bake until cheese melts at 350Β°.
