Mesclun
Mesclun is a French mix of tender young greens dressed lightly so each leaf keeps its shape. Peppery arugula, frisee, herbs, radish, and walnuts make it crisp, bitter, fresh, and elegant.

Wash the greens gently and dry them very well so the vinaigrette does not dilute.
Whisk Dijon, vinegar, salt, and olive oil into a sharp, glossy dressing.
Toss lettuces, arugula, frisee, radicchio, herbs, and radish with just enough dressing to coat.
Fold in toasted walnuts at the end so they stay crisp.
Serve immediately on chilled plates with extra dressing on the side.
