Meatless Chili
Meatless Chili is an moderately easy soup you can prepare in about 1 hour 40 minutes. Made with . polyunsaturated oil, large onions, chopped, (20 oz.) cans red kidney beans (undrained), (20 oz.) can white kidney beans (undrained) and (14 1/2 oz.) cans (no salt) tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oil in a 6-quart pot.
Saute onion until brown.
Add beans, tomatoes, celery, ketchup, dry mustard and pepper.
Add chili to taste.
Simmer 20 to 25 minutes.
Can be frozen.
