Manhattan Clam Chowder
Manhattan Clam Chowder is an moderately easy dinner. Made with 2 slices bacon, cut in 1-inch pieces, 2 celery stalks, chopped, 2 carrots, chopped, 2 medium onions, chopped and 1/2 lb. potatoes, peeled and cut in 1/2-inch pieces, this recipe delivers authentic, satisfying flavors. Fry bacon until crisp.
Drain clams.
Add water to measure 1 1/2 cups.
To liquid, add tomatoes, salt, thyme or oregano and pepper.
Add vegetables.
Cook on high until boiling.
Then simmer for 20 to 25 minutes.
Add clams.
Heat through and serve.
