Manhattan (4Th Of July) Clam Chowder is an moderately easy dinner. Made with 1/4 c. diced bacon, 1/4 c. minced onion, 2 c. diced potatoes, 1/3 c. diced celery and 2 cans chopped clams (6 1/2 oz. each), drained and reserve juice, this recipe delivers authentic, satisfying flavors. In large saucepan, cook and stir bacon and onions until bacon is crisp and onions tender.
Stir in reserved clam juice, potatoes, celery and water.
Cook, uncovered, until potatoes are tender, about 10 minutes.
Add clams, tomatoes and seasonings. Reheat to boiling.
Serves 6.
