Mix sugar, water, vanilla and butter sprinkles together; heat to dissolve sugar.
Mix apples and cinnamon.
Put about 1/2 cup of apple mixture in each tortilla and roll up.
Place tortillas in a 10 x 13-inch baking dish; cover with foil and bake at 350Β° for about an hour.
Each tortilla has about 7 grams fat.
