Low Cal - Roasted Vegetables(Low Calorie) is an moderately easy dinner. Made with 2 medium potatoes peeled & cut into 1/2 inch cubes, 2 medium carrots cut in 1/2 inch slices, 1 lg zucchini cut in 1/2 inch slices, lg red sweet pepper cut in 1 inch pieces and 1 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. In mixing bowl combine potatoes, carrots, peppers and zucchini. Combine the remaining ingredients in a bowl.
