Liz's Favorite Potato Salad
Liz'S Favorite Potato Salad is an easy dinner. Made with small, new red potatoes (about 12), unpeeled and cut into bite-sized chunks, 1 large cucumber, unpeeled and cut into bite-sized chunks and 1/2 c. seven seas red wine vinegar reduced calorie salad dressing or to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil potatoes until done, but still firm.
Drain.
Toss together potatoes, cucumber chunks and salad dressing.
Serve warm, at room temperature or chilled.
