Jellied Cranberry-Orange Salad
Jellied Cranberry-Orange Salad is an moderately easy dinner. Made with 2 c. cranberries, 1 (8 oz.) can crushed pineapple, drained, 2 whole oranges, seeded, 3/4 c. sugar and 1 envelope plain gelatin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grind the cranberries and the oranges (including rind) in a food mill or processor.
Add the sugar, nuts and pineapple; stir well.
Dissolve the gelatin in the hot water; add the cold water and stir well.
Add gelatin to cranberry mixture.
Turn the mixture into a 1 1/2-quart mold and chill until set.
Serve on lettuce leaves with a small garnish of mayonnaise.
Serves 8.
