Jambalaya
Jambalaya is an impressive dinner. Made with 1 lb. sausage, 1 lb. chicken, skinned, 1 lb. shrimp, shelled and drained, 1/4 c. oil and 5 or 6 carrots, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut up sausage, chicken, carrots, celery, green pepper, garlic, onion and fry in oil (don't fry green onions or parsley).
You may have to do one at a time.
Once fried, put in big casserole dish. (Don't do the shrimp yet.)
Add the broth, rice and tomato paste and mix well.
Bake at about 350Β° for about 40 minutes.
The broth will be absorbed when done.
If too dry, add some water.
Take it out of the oven and add cayenne pepper, pepper and salt.
Add recently fried shrimp.
Cook 10 more minutes.
It's done.
Add the uncooked, cut up green onions and parsley.
