Jambalaya
Jambalaya is an moderately easy dinner. Made with 2 c. ham, cut in cubes, 1 tbsp. butter or margarine, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute ham lightly in margarine or butter about 5 minutes.
Add the onion, green pepper and garlic.
Cook 5 minutes; stir occasionally.
Stir in tomatoes, water, salt, thyme and hot sauce. Bring to a boil and stir in the rice.
Cover, lower heat and simmer about 30 minutes or until rice is done.
Makes 6 servings.
