Jalapeño Refried Bean Dip
Jalapeño Refried Bean Dip is an moderately easy dinner. Made with 1/4 c. lard or bacon drippings, 1/4 c. onion, minced (1 small), 1 small clove garlic, minced, 1 (1 lb.) can refried beans or cooked pinto beans, mashed with liquid and 1 to 2 canned hot jalapeño chili peppers, seeded and diced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat lard or drippings in a small skillet.
Add onion and garlic.
Saute 1 minute.
Add refried or mashed pinto beans.
Cook, stirring frequently, until well mixed and lard is absorbed.
Stir in chili peppers, salt and 1/4 cup of the cheese.
Serve with chips.
(If dip is too firm, add a little water.)
