Irish Fruit Soda Bread
Irish Fruit Soda Bread is an impressive British baked good you can prepare in about 1 hour 34 minutes. Made with c. brown sugar, packed, (15 oz.) box seedless raisins, (15 oz.) box golden raisins, (no. 2) can crushed pineapple and to 2 1/2 c. water, this recipe delivers authentic, satisfying flavors. Combine first 9 ingredients in a saucepan, including juice from pineapple.
Bring to a boil over medium heat.
Cook 10 minutes, then reduce heat and simmer 5 minutes.
Cool.
Into a large mixing bowl, sift together dry ingredients and spices.
Add cooled raisin mixture and eggs.
Beat well.
Bake in a greased 10-inch tube pan or 2 loaf pans at 350Β° for 1 hour or until a knife inserted in center comes out clean.
