Idaho Potato Soup
Idaho Potato Soup is an moderately easy dinner. Made with 5 c. thinly sliced potatoes, 1 medium onion, sliced, 2 tsp. salt, 3 tbsp. butter and 2 c. milk or 1 2/3 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put potatoes and onion in saucepan.
Cover with water; add salt.
Cover and bring to a boil.
Reduce heat and simmer about 10 minutes.
Mash potatoes in their liquid.
Add milk and butter. Stir; if soup is still too thick, add milk.
Keep on medium heat until serving time.
Serves 5.
