Hummus
Hummus is an moderately easy dinner. Made with 1 head garlic, 1 (19 oz.) can chickpeas, drained and rinsed or 2 c. cooked chickpeas, 2 tbsp. fresh lemon juice, 1 tbsp. tahini and 2 tbsp. chopped fresh parsley (optional), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 425Β°.
Remove loose papery outside skin from garlic head without separating the cloves.
Slice off the top 1/2-inch.
Wrap in small square of foil and roast 40 minutes until garlic is very soft.
Unwrap and cool slightly.
Separate cloves and peel.
