Honey Apricot Bread
Honey Apricot Bread is an moderately easy dinner. Made with 1 1/2 c. flour, 2/3 c. firmly packed brown sugar, 2 1/2 tsp. baking powder, 1/2 tsp. salt and 1 egg, slightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
Mix flour, sugar, baking powder and salt. Mix egg, milk, honey and margarine.
Add flour mixture; stir just until moistened.
Stir in cereal and apricots.
Pour into 8 x 4-inch loaf pan which has been sprayed with nonstick cooking spray.
Bake 55 to 60 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pan.
Cool completely on wire rack.
Makes 16 (1/2) slices.
