Green Chili Grits Casserole
Green Chili Grits Casserole is an moderately easy dinner. Made with 6 c. boiling water, 1 1/2 tsp. salt, 1 lb. velveeta cheese (light velveeta may be used), 1 can chopped green chili peppers and 1/2 stick margarine (low-fat may be used), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Use a large, thick boiler.
Bring water and salt to a boil. Add grits; cook slowly until thick.
Add cheese (cubed), green chilies and margarine.
Stir until the cheese melts.
Stir in the beaten eggs.
Pour into a casserole dish sprayed with nonstick spray.
Cook for 1 hour in a 275° to 300° oven.
Makes 8 to 10 servings.
Recipe may be cut in half.
