Garden Vegetable Pasta
Garden Vegetable Pasta is an moderately easy dinner. Made with 1 tbsp. butter or sesame oil, 1 garlic clove, minced, 1 onion, chopped, 5 c. vegetables (yellow squash, zucchini and corn) and 1 c. tomato juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Melt the butter in a large frying pan.
Saute the garlic and onion for 2 to 3 minutes.
Add the vegetables and the tomato juice, cover and simmer about 15 minutes.
(Start boiling water for noodles during this time.)
While the vegetables are simmering, cook the noodles according to package directions.
Pour vegetables on top of noodles and serve.
