Fried Pies
Fried Pies is an moderately easy dinner. Made with 1 lb. dried apricots, 1 c. sugar, 1/4 to 1/2 c. water, 2 sticks butter, softened and 1 (8 oz.) pkg. cream cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine apricots, sugar and water in a medium saucepan and cook until apricots are tender; set aside.
Mix the cream cheese and butter together.
Sift flour and salt together and blend in cream cheese-butter mixture until thoroughly mixed.
Chill several hours or until dough is easy to handle.
Roll dough thin and cut in circles with an empty coffee can.
Place 1 to 2 teaspoons of apricot mixture in center of each circle.
Fold over and pinch edge together with fork.
Place on an ungreased baking sheet and bake at 375Β° for 15 to 20 minutes.
Top with powdered sugar glaze, if desired.
Makes approximately 26 pies.
