Fresh Apple Muffins
Fresh Apple Muffins is an moderately easy dinner. Made with 1/2 c. vegetable oil, 1/2 c. sugar, 2 eggs, 1/2 tsp. vanilla and 1 1/2 c. unbleached flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
In a large bowl, mix together oil, sugar, eggs and vanilla; beat with a whisk until creamy smooth. In a separate bowl, combine flours, baking powder and salt.

Fold in apples and nuts.
Fill greased muffin tins about 3/4 full.
Bake about 25 minutes or until inserted toothpick comes out clean.
