Fluffy Potato Bake
Fluffy Potato Bake is an moderately easy dinner. Made with 3 lb. potatoes (6 large), 1/4 c. finely chopped onion, 1/4 c. margarine, 1 (12 oz.) carton small curd cottage cheese (1 1/2 c.) and 1/4 c. snipped parsley, this recipe delivers authentic, satisfying flavors. Cook, peel and mash the potatoes.
In a saucepan, cook onion in 1/4 cup margarine until tender, but not brown.
Stir onion, cottage cheese, parsley and salt into mashed potatoes.
Spoon potato mixture into a well-greased 2-quart casserole.
Drizzle melted margarine over top, if desired.
Bake at 350Β° until mixture is heated through and browned, about 30 minutes.
Garnish the potato casserole with additional snipped parsley, if desired.
