Five Guys Hamburgers

Divide the beef into 8 loose balls and heat a griddle or heavy skillet until very hot.
Toast the buns cut-side down, then spread them with mayonnaise, ketchup, mustard, or the toppings you like.
Smash the beef balls on the griddle into thin patties, season with salt and pepper, and cook until deeply browned at the edges.
Flip, add cheese to half the patties, and stack each cheesed patty with a second patty.
