Fat-Free Potato Burritos
Fat-Free Potato Burritos is an moderately easy dinner. Made with 6 c. chunky enchilada sauce, 12 whole wheat tortillas or 12 to 14 soft corn tortillas, 3 c. mashed potatoes, 1 c. chopped scallion and 1 c. frozen corn kernels, thawed, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Spread one cup of the sauce over the bottom of a casserole dish.
Spread a line of potatoes down the center of each tortilla.
Sprinkle on some scallion, corn and green chilies.
Roll up and place, seam side down, in the casserole.
Repeat until all of the ingredients are used.
Pour the remaining sauce over the tortillas.
Cover and bake for 30 minutes, or until sauce is bubbly.
