Egyptian Cheese Salad(Serves 6) is an moderately easy dinner. Made with 1 large cucumber, peeled, halved lengthwise and seeded, salt, 12 oz. feta cheese, drained (if necessary), 1/2 c. finely chopped mild or sweet onion and 1/4 c. olive oil, this recipe delivers authentic, satisfying flavors. Score cucumber with fork.
Sprinkle with salt and let stand 20 minutes.
Crush cheese with fingertips or fork and blend in onion, lemon juice and oil.
Season with pepper.
