Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner you can prepare in about 1 hour 32 minutes. Wash and peel eggplant. Slice into 3/8-inch slices.
Dip into beaten eggs until coated well, then place into seasoned bread crumbs until well coated.
Cook in electric pan at 300° for 3 to 4 minutes on each side.
You may use olive oil, Pam or vegetable oil.
Make 2 rows in a 13 x 9-inch dish.
Pour sauce over fried eggplant.
Sprinkle with cheese and sliced mushrooms.
Bake at 350° for 30 minutes until slightly golden.
Allow cheese to set for 10 minutes before serving.
