Date Swirl Cookies
Date Swirl Cookies is an moderately easy dinner. Made with 3/4 lb. chopped dates, 1/3 c. water, 2 c. sifted flour, 1/4 tsp. salt and 1/2 c. brown sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine dates, 1/3 cup sugar and 1/3 cup water in saucepan. Cook over low heat, stirring constantly until pasty, about 2 minutes.
Add chopped nuts.
Let cool.
Sift together flour, baking powder, soda and salt.
Cream together shortening and brown and white sugars.
Add eggs and mix well.
Stir in with dry ingredients.
Toss dough on lightly floured board.
Roll out 1/4-inch thick (can divide and make 2 rolls).
Spread date mixture over dough.
Roll up like a jelly roll and wrap in wax paper. Chill overnight in refrigerator.
Cut in slices.
Bake on lightly greased cookie sheet at 350Β° for 12 to 15 minutes.
Makes 4 to 5 dozen.
