Dad's Chili
Dad'S Chili is an moderately easy dinner. Made with 3 to 4 lb. ground chuck, 2 onions, chopped, 3 tsp. chili powder per lb. ground chuck, 1/2 tsp. cayenne (add more for hotter chili) and 1 small can tomato sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry meat in skillet until done; drain well.
Put meat, chili powder, cayenne, salt and pepper in large pot.
Fill with water. Boil 3 to 4 hours, adding water when needed.
Add onions.
Cook until tender.
Add tomato sauce; stir well.
Spoon off grease that is floating on top.
Add a little cracker meal for grease you cannot remove.
This helps thicken chili.
Add 2 more teaspoons chili powder.
Add salt and pepper to taste.
Add beans.
The longer the meat and chili powder boil, the better the chili taste.
