Crispy Oven Fried Mexican Chicken is an moderately easy dinner. Combine V-8 and hot sauce.
Add chicken parts and marinate for 30 minutes at room temperature.
Drain chicken and discard marinade.
In a large plastic bag, combine remaining ingredients. Coat each piece of chicken and place in a baking pan that has been sprayed with Pam.
Sprinkle remaining crumb mixture over chicken. Bake 1 hour at 350Β°.
