Creamy Clam Chowder
Creamy Clam Chowder is an moderately easy dinner. Made with 3 slices bacon, cut into 1-inch pieces, 1 medium onion, minced, 1 can minced clams, drained (save juice), 1 large potato, cubed and 1 can cream of celery soup, this recipe delivers authentic, satisfying flavors. Cook bacon until crisp; remove to paper towel to drain. Discard all but 2 tablespoons bacon drippings.
Saute onion in drippings for 4 to 5 minutes.
Add clam juice and potatoes.
Cover and cook over low heat until tender for 15 minutes.
Add bacon, minced clams, cream of celery soup, milk and pepper; cook over low heat until heated through.
Garnish with bacon you reserved (2 or 3 pieces).
Serve with oyster crackers, if desired.
Makes 4 servings.
