Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 1 small onion, sliced, 4 potatoes, cubed or sliced, 2 c. water, 2 c. cream-style corn (1 can) and 1 1/2-inch cubed salt pork, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Use 2 tablespoons butter instead of salt pork if more convenient.
Dice and put in a deep pan.
Cook slowly until fat is melted and pork bits are crisp and brown.
Add onion; cook slowly for 5 minutes, stirring often.
Add potatoes and 2 cups water, cooking until potatoes are tender.
Add the cream-style corn, 2 cups milk and the Carnation milk.
Add 2 tablespoons butter and salt and pepper to taste.
Serves 6 to 8.
