Cold Yellow Rice Salad
Cold Yellow Rice Salad is an moderately easy dinner. Made with 2 pkg. r.m. quiggs yellow rice mix (7 oz.), 2 jars marinated artichoke hearts, drain but reserve liquid, 3/4 c. green pepper, chopped, 16 stuffed green olives, sliced and 8 green onions, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Prepare rice as directed on package.
Add 2 teaspoons chicken bouillon to boiling water and omit butter.
Add to cooled rice the chopped artichokes, green pepper, olives and onions. Combine mayonnaise, curry powder and reserved artichoke liquid and add.
Chill several hours.
