Chimichangas
Chimichangas is an moderately easy dinner. Made with 1 lb. ground beef, 1 medium onion, 1 (8 1/4 oz.) can refried beans, 1 medium tomato, chopped and 1/3 c. minced parsley, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute beef and onion.
Remove from heat, add beans, tomato, parsley, salsa, oregano, cumin and half of olives.
Fry each tortilla until crisp. Quickly spoon filling into center of tortilla.
Fold inside and roll up around filling.
Secure with toothpick.
Fry rolls in oil.
Top with olives, cheese, lettuce and tomatoes.
