Chili Rellenos Casserole
Chili Rellenos Casserole is an moderately easy dinner. Made with 8 whole chilies, 1/2 lb. monterey jack cheese, 1 c. grated cheddar cheese, 3 eggs and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Place chilies under broiler after washing; make a small slit in each pepper.
Blister on all sides.
Place in plastic bag for 15 minutes.
Put in cold water; peel and seed.
Cut Monterey cheese in strips and stuff chilies.
Put in casserole dish; sprinkle with Cheddar.
Beat egg, salt, milk and flour until smooth.
Pour over and bake 35 to 45 minutes, until knife blade comes out clean.
