Chicken Rice Soup
Chicken Rice Soup is an moderately easy dinner. Made with 3 lb. stewing chicken, cut in pieces, 2 qt. water, 1 tbsp. salt, 6 peppercorns and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine chicken, water, salt and peppercorns in a large saucepan.
Cover.
Simmer 2 1/2 hours until chicken is tender. Remove chicken and peppercorns.
Skim off fat.
Cut chicken into small cubes.
Add chicken and remaining ingredients to broth. Cover; simmer 30 minutes until rice is tender.
Makes 6 to 8 servings.
