Chicken Pilaf
Chicken Pilaf is an moderately easy dinner. Made with 3/4 lb. slivered raw chicken, 2 tbsp. oil, 2 c. (4 oz.) sliced mushrooms, 1 medium onion, chopped and 1 1/2 c. dry rice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute chicken in oil until lightly browned.
Add mushrooms, onion and rice.
Saute, stirring until rice is lightly browned. Add broth and salt.
Bring to a full boil.
Cover.
Remove from heat and let stand 5 minutes.
